Beef slow cooker recipe

Ingredients:

¾ kg stewing or braised beef
1 packet French Onion soup mix
1 bay leaf
1 sprig fresh thyme or ½ teaspoon dry
2 cups water
seasoned pepper
chopped fresh parsley for serving

Method:

Cut meat into 1 inch (2.5cm) cubes, removing all fat.

Place meat into slow cooker. Add soup mix and all other ingredients except parsley.

Stir lightly to mix. Cover slow cooker and cook on Low for at least 10 hours.  (This ensures these cheap meat cuts will be succulent and tender).

Reserve half a cup of the rich stock, place in a small saucepan and blend very carefully with 1 tablespoon flour.

Bring to a gentle boil, whisking constantly until thickened. Pour back into slow cooker and stir gently into contents. Reheat on High. Serve with chopped parsley on bed of rice.
