Slow cooker chicken recipes

Chicken pieces cooked in mixed spices, dry sherry, onions, mushrooms and tomatoes in a slow cooker.  

 

Ingredients:
1.5 kg (3 lb) chicken pieces
salt and pepper
cinnamon
2 cloves garlic, chopped
1 green pepper, chopped
2 small onions, sliced
2 stalks celery, chopped
1 medium can sliced mushrooms, drained
¼ cup dry sherry
1cup fresh (or canned) chopped tomatoes
3 tablespoons flour
3 tablespoons water

Method:
Rinse chicken pieces and pad dry. Season with salt, pepper and cinnamon.

Place green pepper, onions, celery and garlic in slow cooker.

Add seasoned chicken pieces, pour in mushrooms, sherry and tomatoes, stir well.

Cover and cook on Low setting for 5-8 hours, or High 3 – 4 hours.

Remove chicken pieces, keep warm.

Make a smooth paste of flour and water, stir into slow cooker.

Return chicken, cover and cook on High setting for 15-20 minutes or until gravy is thickened.

Serve with hot noodles or fluffy rice.

Cooking time: 5-8 hours on Low, 3-4 hours on High
